MAIN DISH SPANISH RICE | |
1 lb. ground beef 6 slices bacon 1 med. onion, thinly sliced 1/4 c. green pepper, chopped 3/4 c. uncooked long grain rice 1/2 tsp. salt 1/8 tsp. pepper 1/4 c. catsup 1 (1 lb.) can tomatoes, undrained 1 (8 oz.) can tomato sauce 2 drops hot pepper sauce In large skillet, brown beef. Drain off fat, remove meat and set aside. In same skillet, cook bacon until crisp. Remove bacon, crumble and set aside. Saute onion and green pepper in 2 tablespoons bacon drippings. Stir in beef, bacon and remaining ingredients. Bring to boil. Cover, reduce heat and simmer for 30 to 40 minutes or until rice is tender. 5 servings. |
