SPANISH RICE 
1/4 c. oil
1 c. rice
3 sliced tomatoes
1 sliced onion
Salt and pepper

Place rice and oil in a pan and cook until brown. Meanwhile, cook in water tomatoes, onions and salt and pepper. Cook until thick. When rice is brown pour tomato mixture over rice and stir, turn burner to low, cover pan and let simmer for 45 to 60 minutes.
