MEXICAN HOT CHOCOLATE 
2 sq. unsweetened chocolate
2 tbsp. sugar
1 tsp. ground cinnamon
Pinch of salt
1/2 tsp. almond extract
1/2 tsp. vanilla extract
4 c. milk

Melt chocolate in double boiler over hot water. Blend in sugar, then add remaining ingredients. Heat slowly to simmer, but do not boil. Just before serving, beat until frothy with an electric mixer or whisk. Makes 4 cups.
