SWEET POTATO BISCUITS 
2 c. sweet potatoes, mashed
3/4 c. sugar
1 tsp. salt
2 tsp. baking powder
1/2 c. shortening
3 c. flour

Wash, peel and cut up fresh sweet potatoes. Cook until soft. Drain and mash. (May freeze extra potatoes to be used later.)

In bowl, cut in flour and shortening. Mix remaining ingredients together and add to flour mixture. Roll out on floured board and cut into shapes. Biscuits will be orange.

Bake in 350°F oven for 25 to 30 minutes.

Must buy fresh sweet potatoes. If using canned potatoes, biscuits will be brown and not as tasty as when using fresh.
