BEET RELISH 
1 pt. chopped boiled beets
1 pt. chopped cabbage
1/4 tsp. white pepper
Pinch of red pepper
1/2 tsp. salt
1 c. chopped celery
3/4 c. sugar
1 c. vinegar
1/2 c. water

Peel beets, mix all ingredients and let heat through. When boiling, pour into sterilized Kerr jars to within 1/2 inch of top. Put on cap, screw band firmly tight. Process in boiling water bath 5 minutes. Yield: 2-3 pints.
