BEET HORSERADISH RELISH 
1 qt. beets, cooked & ground
1 qt. cabbage, ground
1 (8 oz.) can hot green ground chili
1/3 c. horseradish
2 c. white vinegar
3/4 c. sugar
2 tbsp. salt

Bring all ingredients to a boil, pack into sterile pint jars and seal. Process 20 minutes. Yield: 4 pints.
