Boil 3 pounds veal and 2 pounds side pork. When cooked, cool and pick off meat and grind. Add 1 tablespoon pepper, 2 teaspoons salt, 1 teaspoon ground allspice and mix thoroughly. Now bring the meat juice to boiling point and put in the meat. Put meat in cloth bag and put a heavy weight on it overnight which presses the meat into a solid mass. Then make a strong salt solution, boiled, and keep meat this way in the ice box. |
