20 MINUTE WORKING WOMAN'S CHILI | |
1 lb. ground beef chuck 1 small onion, diced 1 green pepper, diced 1 red bell pepper, diced 1 (15 oz.) can kidney beans, drained and rinsed 1 (15 oz.) can beans, your choice (pinto, black, cannelloni), drained and rinsed 1 (4 oz.) can diced green chilies 1 (15 oz.) can diced tomatoes 1 (8 oz.) can tomato paste (Hunts) 1 can water (use empty paste can) 1 env. chili seasoning (regular or spicy, your choice) Brown ground beef. While beef is cooking dice onion and peppers, drain and rinse beans, and open the cans of tomato and the chilies. Drain beef. Put beef in a large pan. Add onion and peppers and sauté for five minutes. Add beans, diced tomatoes, tomato paste, green chilies and chili seasoning. Fill tomato paste can with water and add to mixture. Stir well and adjust seasoning (hot sauce, chili powder, etc.) Let cook on low for 5 to 10 minutes. Serve with pasta, baked potatoes, rice or alone. Melt cheddar cheese on top if desired.
