PASTA WITH SHRIMP & FETA CHEESE 
1 lb. pasta (linguine or penne pasta)
1 lb. medium raw shrimp, peeled and deveined
2 tablespoons butter, butter, or olive oil
6 scallions, sliced
2 tablespoons chopped chives
2 tablespoons parsley
1/2 lb. feta cheese, cubed or crumbled
fresh ground pepper

Cook pasta, drain well, and keep warm. Sauté shrimp in butter (oil) until pink, cooked through.

Add scallions, half of the chives and parsley. Stir in feta cheese and season with pepper. Place pasta in a serving bowl and top with shrimp/feta sauce. Garnish with remaining chives.

Serves 4.
