SKILLET SHRIMP & PASTA | |
1 1/2 c. orzo (pasta) or sm. shell macaroni 6 bacon slices 1/2 c. oil 1 c. thinly sliced celery 1/4 c. chopped green onions 1 (10 oz.) pkg. frozen mixed vegetables 1 3/4 tsp. salt 1/4 tsp. pepper 2 (6 oz.) pkgs. frozen cooked tiny Alaskan shrimp, thawed & drained Prepare pasta as label directs. Meanwhile in 12" skillet over medium heat cook bacon slices until browned and crisp; remove to paper towels to drain. Spoon off drippings from skillet. In same pan over medium heat, heat oil until hot. Add celery, green onions and frozen mixed vegetables. Crumble bacon and stir in vegetable mixture with salt, pepper, shrimp and pasta. Heat through to serve hot. To serve cold, prepare early in day, cover and refrigerate. |
