CARAMEL CREAM PIE 
1/2 c. sugar
1 c. sugar
3 tbsp. corn starch
1/4 tsp. salt
3 egg yolks, beaten
2 c. milk
3 tbsp. butter
1 1/2 tsp. vanilla
9 inch baked pastry

Melt 1/2 cup sugar and brown to a light, golden caramel color, do not brown too dark, or it will burn.

In the meantime, in a separate saucepan add 1 cup sugar, 3 tablespoons corn starch, 1/4 teaspoon salt and 3 beaten egg yolks. Gradually add 2 cups milk. Cook until hot and add egg yolks and cook until thick and boiling.

Add caramelized sugar SLOWLY to egg and milk mixture. Cook 10 more minutes and add butter and vanilla. Pour into pastry.
