FUNNEL CAKES 
1 1/4 c. flour
2 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. vanilla
1 beaten egg
2/3 c. milk
Liquid vegetable oil
Kitchen funnel
Powdered sugar

Heat 2" of oil in heavy skillet. Mix dry ingredients. Mix liquids together and add to dry ingredients. Holding your finger over narrow opening of funnel, pour 1/2 cup batter into the funnel. Remove finger from funnel and swirl batter in a circular motion onto the oil. When bottom has browned, turn to cook the other side. Drain cakes well on paper towels. Coat with powdered sugar.
