FUNNEL CAKE 
2 c. all-purpose flour
2 tbsp. sugar
1 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
2 eggs
1 1/4 c. milk

Combine flour, sugar, baking powder, cinnamon and salt in a mixing bowl. Combine eggs and 1 cup milk; pour into flour mixture and stir until smooth. If batter is too heavy, add additional milk. Batter should pour in a heavy stream. Use 1/3 cup of batter per funnel cake. Preheat oil in a deep fryer. In a circular motion pour batter into hot oil. Fry 1 1/2 minutes on each side. Serve warm with powdered sugar or syrup. Makes about 6 cakes.
