CRACKLING CORNBREAD | |
1 1/2 c. cornmeal 1 tsp. salt 2 tbsp. all purpose flour 3 tsp. baking powder 1 egg, beaten 1 1/4 c. milk 1 1/2 c. cracklings Sift meal with salt, flour and baking powder. Beat egg into milk; add to dry ingredients, mixing well. Stir in cracklings. Turn batter into a greased 9" square pan. Bake at 425 degrees for 20 to 25 minutes or until done and golden brown. Cut into squares and serve at once. |
