CRACKLING CORNBREAD 
1 1/2 c. cornmeal
1/4 c. flour
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
1 egg
1 c. finely cut cracklings or crumbled crisp bacon

Sift together dry ingredients. Add buttermilk and egg, stirring until well mixed. Season cracklings with additional salt to taste and fold in last. Pour batter into very hot, well greased iron skillet or muffin pan (12 muffins). Bake in 450 degree oven for about 25 minutes.
