CRACKLING CORNBREAD 
2 tbsp. bacon drippings
2 c. corn meal
1/2 c. all-purpose flour
1 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1 c. buttermilk
1 egg, beaten
1 c. chopped cracklings

Place bacon drippings in a 9 inch skillet; set skillet in oven and heat oven to 425 degrees. Combine cornmeal, flour, salt and baking powder in medium mixing bowl; mix well. Add soda to buttermilk, stir into dry ingredients. Add egg; beat well. Stir in cracklings. Pour into hot skillet and bake at 425 degrees about 20-25 minutes or until browned. Yield: 8 servings.
