CRACKLING CORNBREAD 
1 1/2 c. cornmeal
1/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 egg
2 c. buttermilk
1 c. finely cut cracklings

Sift together dry ingredients. Add buttermilk and egg, stirring until well mixed. Season cracklings with additional salt to taste and fold in last. Pour batter into very hot, well greased iron skillet or muffin pan (12 muffins). Bake at 450 degrees for about 20-25 minutes.
