SCALDED LETTUCE 
1 egg
1/4 c. vinegar
1 tbsp. flour
2 c. water
1 tsp. salt
1/4 c. oil
Dash of pepper

Beat egg. Add vinegar and flour and beat with fork. Then add water and salt and pepper. Have oil hot and pour mixture in and cook until slightly thick. Pour over a bowl full of leaf lettuce and spring onions.
