GRIDIRON GRINDER POCKET
SANDWICHES
 
1 c. sliced mushrooms
1/2 c. celery
1/3 c. chopped green pepper
2 tbsp. vegetable oil
1 tbsp. red wine vinegar
1/2 tsp. oregano
1/4 tsp. salt
2 (6 inch) pita breads
4 slices (about 1/4 lb.) boiled ham or cold cuts
4 slices (about 1/4 lb.) Provolone cheese

In a medium bowl, combine mushrooms, celery, green pepper, oil, vinegar, oregano and salt. Stir well. Cover and marinate in refrigerator for several hours or overnight.

To serve, cut each pita in half and open bread to form a pocket. Bake sandwich in toaster oven preheated to 400 degrees about 6 to 8 minutes until cheese is melted. Makes two 6-inch sandwiches.
