OVEN BAKED POTATO WEDGES 
Cooking spray
6 tbsp. butter (3/4 stick)
4 lg. potatoes, about 2 lbs.
1 med. onion, minced
1 tsp. seasoned pepper
Salt

About 40 minutes before serving, preheat oven to 425 degrees. Spray large open roasting pan with vegetable cooking spray. Add butter. Place pan in oven to melt butter. Remove pan from oven. Cut unpeeled potato lengthwise into 8 wedges. Add potatoes to melted butter in roasting pan. Sprinkle with minced onion seasoned pepper and 1/2 teaspoon salt, gently toss to coat. Bake 30 minutes until potatoes are tender and evenly browned, turning occasionally. Add salt to taste.
