APPLE - CABBAGE SLAW 
3 c. shredded cabbage
1 1/2 c. chopped apple, unpeeled (red skinned apples look the best)
1/2 c. celery seed dressing, (recipe follows)
1/4 c. sliced celery

DRESSING:

1/2 c. sugar
1 tsp. dry mustard
1 tsp. salt
4 1/2 tbsp. cider vinegar
2 tsp. grated onion
1 c. salad oil
1 tbsp. celery seed

FOR DRESSING: Mix sugar, mustard and salt. Blend in 2 tablespoons of the cider vinegar and the grated onion. Gradually beat in the oil. Beat until thick and light. Slowly beat in remaining vinegar. Stir in celery seed. Pour into screw-top jar and shake vigorously to blend well. Store covered in refrigerator, shake well before using.

FOR SALAD: Toss together cabbage, apple and celery. Pour on the dressing and toss lightly to coat evenly.
