BROCCOLI CASSEROLE 
1 pkg. frozen chopped broccoli
1/2 c. chopped onion
2 tbsp. butter
1 tsp. salt
1/4 tsp. pepper
2 eggs, slightly beaten
2 c. milk
2 c. cooked long grain brown rice
1 1/2 c. grated sharp cheese

Cook broccoli, drain thoroughly. Saute onion in butter; add seasonings. Mix broccoli, onion and remaining ingredients. Put into a buttered 1 1/2 quart casserole. Bake at 325 degrees for about 1 hour and 15 minutes or until knife inserted in center comes out clean. 8 servings.
