BROCCOLI AND RICE CASSEROLE 
2 tbsp. butter (can use butter flavored Pam)
1/2 c. chopped onion
1/2 c. chopped celery
10 oz. pkg. chopped broccoli frozen
2 c. cooked brown rice
1 c. shredded lowfat cheese
10 3/4 oz. can condensed cream of mushroom

Brown chopped onion and celery until onions are opaque. In a casserole dish combine cooked broccoli and cooked rice. Add remaining ingredients and cook until bubbly. Serves 6.
