MINESTRONE (CABBAGE) SOUP 
2 qt. boiling water
3 cubes beef bouillon
2 onions, diced
1/2 head cabbage, shredded
1 (1 lb.) can of tomatoes
3 to 4 carrots, sliced
1/2 tsp. oregano
1 tbsp. minced parsley
Salt and pepper to taste

Step 1: Simmer all ingredients in large pot, covered, for 3 hours.

Step 2: Serve plain or with grated Parmesan cheese on top.
