CHICKEN BREASTS WITH CHEESE AND
HAM
 
2 whole skinless and boneless chicken breasts
1 egg
Salt and pepper to taste
1 tsp. peanut, vegetable or corn oil
1 c. fine fresh bread crumbs mixed with 1/4 c. Parmesan cheese (grated)
1/4 c. flour
3 tbsp. butter
4 thin slices boiled ham
4 thin slices cheese either Fontina or Swiss

Split breasts and trim away all fat. Place each piece between sheets of plastic wrap and pound with flat mallet. Combine egg, salt, pepper and oil in dish. Put crumb mixture and flour in separate dishes.

Dip each piece in flour, then in egg and then in crumb mixture. Melt butter in skillet. Add chicken pieces. When browned on one side, about 4 minutes, turn and cook until golden brown on other side.

Arrange chicken pieces in baking dish and cover with ham and top with cheese. Bake 10 minutes in 375 degree oven.
