COCONUT PIES 
1 c. buttermilk
1-1/2 c. sugar
1 stick butter, melted
6 eggs
1 tsp. vanilla
1 pkg. frozen coconut or 1 can coconut

Beat eggs until fluffy, add sugar and melted butter. Add buttermilk, coconut and vanilla; mix well. Pour in 2 unbaked pie shells. Bake at 350 degrees for 40 to 45 minutes.
