DOUBLE-CHOCOLATE WAFFLES 
1 tbsp. butter
3/4 c. all-purpose flour
1/4 c. cocoa
1/4 c. sugar
1/4 c. mini chocolate chips
1 1/2 tsp. baking powder
1/4 tsp. salt
1 egg
3/4 c. milk
1/2 tsp. vanilla

Heat waffle iron. Melt butter. Combine flour, cocoa, sugar, baking powder and salt. Separate egg and beat yolk with milk and vanilla. Stir milk mixture and butter into flour mixture until dry ingredients are well moistened. Batter may be lumpy. Stir in mini chips. Beat egg whites until stiff peaks. Gently fold into batter.

Pour batter onto waffle iron using about 1/2 cup batter for 2 waffles. Bake until crisp and brown. Makes 8 waffles.

Serve with whipped cream and fruit or ice cream and chocolate sauce. Great for dessert or a meal with sausages.
