SLIM-DOWN CHICKEN SALAD 
1/3 c. V-8 cocktail vegetable juice
1 tbsp. salad oil
1 tbsp. vinegar
1/2 tsp. honey
1/4 tsp. basil leaves, crushed
1/8 tsp. dry mustard
Generous dash of salt
2 c. lettuce, torn in bite size pieces
1 (5 oz.) can Swanson chunk white chicken
1/2 c. cherry tomatoes, cut in half
1/2 c. sliced zucchini squash
1 sm. red onion, sliced
Generous dash of pepper

In covered jar or shaker, combine V-8 juice, oil, vinegar, honey, and seasonings; chill. Shake well before using. Toss with remaining ingredients. Makes about 4 1/2 cups, 2 servings.
