VEGETABLE MELT 
1 (3 lb.) vegetable medley (par-cooked)
1 stick butter, melted
2 strip pkgs. Ritz crackers, crushed
1 (8 oz.) Velveeta cheese

Crush crackers and add melted butter. Reserve 1 cup. Put remaining in 13 x 9 inch pan. Spread par-cooked vegetables. Dice Velveeta on top. Sprinkle remaining crumbs. Bake at 350 degrees for 15 minutes.
