ZUCCHINI BAKE 
1 can cream of chicken or mushroom soup
1/2 c. sour cream
4 c. zucchini (shredded or sliced)
1 c. shredded carrots
1/4 c. onion, chopped
2 c. stuffing
1/4 c. butter, melted
1 sm. Mozzarella cheese

Mix soup, sour cream, zucchini, carrots and onions. Place in casserole dish, stuffing add other ingredients. Top with cheese. Bake at 350 degrees for 30 minutes.
