ZUCCHINI BEEF BAKE 
5 med. zucchini, slice 1/4 inch rounds
2 tbsp. oil
1 lb. ground beef
1 med. onion, chopped
1/2 c. diced celery
1 (8 oz.) can tomato sauce
1 c. sliced mushrooms
8 oz. Mozzarella cheese
1/4 c. red wine vinegar
1/2 tsp. salt
1/2 tsp. basil
1/4 tsp. pepper

Spread zucchini evenly in 13 x 9 baking pan. In large skillet heat oil and brown beef, onions, and celery.

Stir in tomato sauce, mushrooms, wine vinegar, and the seasonings. Spoon over zucchini. Sprinkle with cheese.

Bake in 350 degree oven for 25-30 minutes until bubbly. Serves 6.
