ZUCCHINI GRIDDLE CAKES 
4 c. grated zucchini
2 eggs, slightly beaten
1/2 c. baking mix (like Bisquick)
1/4 c. grated cheese (optional)
1 tbsp. chopped pimiento (optional)
Freshly ground pepper to taste

Lightly grease a griddle heated over medium heat. Combine all ingredients in a bowl and thoroughly fold together. Spoon out mixture and form patties on the griddle. Cook until brown on the bottom, then turn over with spatula. Cook until firm in the center and browned on the bottom.
