BRONCO'S APPLE GRIDDLE CAKES 
2 c. unbleached flour
5 tsp. baking powder
2 tsp. sea salt
3 tbsp. fructose
1 tbsp. ground cinnamon
2 c. milk
6 tbsp. melted butter or canola oil
2 eggs, beaten
1 c. unpeeled apples, finely chopped

Mix together flour, baking powder, salt, fructose, and cinnamon. Add milk, oil and flour mixture to eggs. Beat until smooth. Fold in apples. Oil griddle very lightly before baking. Pour on about 1/4 cup batter for each cake. Bake until top is bubbly and edges dry, turn and brown on other side. Makes 2 1/2 dozen cakes.
