CREAMED SWEET POTATOES 
4 c. sweet potatoes
1/4 c. butter
1/4 c. orange juice
1/2 tsp. salt
1 c. miniature marshmallows

Into 4 cups of hot mashed sweet potatoes, stir in 1/4 cup butter, 1/4 cup orange juice and 1/2 teaspoon salt. Fold in marshmallows. Place in a 1 1/2 quart casserole dish; bake for 20 minutes at 350 degrees. Top with additional marshmallows, if desired, and return to oven until slightly browned.
