CELERY - ROTELLE SALAD WITH
CELERY SEED DRESSING
 
8 oz. rotelle (corkscrew) pasta
3 c. sliced celery
1 (12 oz.) can shoe peg corn
3/4 c. chopped red bell pepper (sweet)
1 1/4 c. deli ham or turkey, cut in thin strips

Cook pasta according to package directions; drain and rinse. In a large bowl combine pasta, celery, corn, red bell pepper and ham. Toss with celery seed dressing. Serve at room temperature or cover and refrigerate until chilled.

CELERY SEED DRESSING:

4 1/2 tbsp. cider vinegar
3 tbsp. water
3 tbsp. vegetable oil
1 tbsp. Dijon mustard
1 1/2 tsp. salt
3/4 tsp. celery seed

In a bowl using a wire whisk, combine all ingredients.
