BACON COLE SLAW | |
1 med. head of cabbage Salt 1 lb. bacon 1 1/2 c. mayonnaise 1/4 c. vinegar 2 tbsp. sugar (heaping) 1/4 c. bacon grease Shred cabbage into large bowl; salt thoroughly. Cover with towel and let sit at least 1 hour. Uncover cabbage and squeeze excess water until dry. Cut bacon in 1 inch pieces and fry as usual. Mix fried bacon into cabbage. (Retain 1/4 cup of bacon grease.) Mix together remaining ingredients and stir into cabbage and bacon. |
