POTATO AND EGG 
2 potatoes, sliced potato chip style, but thicker
8 strips bacon
4 eggs
1/2 c. chopped onion
3/4 c. milk
Grated cheddar cheese (about 4 oz.)

Fry bacon until crisp, remove and crumble. Drain all oil except 1 tablespoon. Add potatoes to oil and fry until tender with onion. Beat eggs and milk in bowl and pour over potatoes and let set about 3 minutes. Lift mixture with spatula gently to allow top eggs to go to bottom. Add salt, pepper and garlic powder. Add bacon and cheese. Cover and allow to simmer 5 minutes. Cook on medium heat.
