EGG, POTATO, AND CHEESE AZORES 
1/3 c. cottage cheese
2 tsp. vegetable oil, divided
1/2 tsp. vinegar
1/2 garlic clove, mashed
1/4 tsp. chopped fresh parsley
1/8 tsp. dried coriander leaves
Salt and pepper to taste
1 hard-cooked egg, chopped finely
3 oz. boiled potato, sliced
Lettuce leaves
Parsley sprigs

Combine cottage cheese with 1 teaspoon of the oil, vinegar, garlic, mustard, parsley, coriander, and salt and pepper. Combine egg with remaining oil. Arrange potatoes on a bed of lettuce. Spread cottage cheese mixture over potatoes. Top with egg mixture. Garnish with parsley sprigs. Makes 1 serving.
