CHICKEN SARONO | |
6 boneless, skinless chicken breast halves Salt, pepper, garlic powder, curry powder and flour 1/4 c. oil 1/2 lb. fresh mushrooms, sliced 1/4 c. Amaretto di Sarono (or any brand) Grated rind and juice of 1 lemon (optional) 1 1/2 c. chicken broth 1 tbsp. cornstarch Rice or noodles Cut chicken into 1 inch wide strips. Sprinkle with salt, pepper, garlic powder, and curry powder to your taste (light on curry powder). Roll strips of chicken in flour. Heat oil in skillet. Brown chicken on all sides. Add mushrooms, Amaretto, grated lemon rind and juice. Simmer 5 minutes. Mix broth and cornstarch and add to mixture, stirring over low heat until it bubbles and thickens. Serve over rice or noodles. Serves 4 to 6 people. |
