SOUR ORANGE MARMALADE 
6 sour oranges
3 qts. water
5 lbs. sugar
Juice of 1 lemon

Scrub oranges. Cut in half, squeeze juice from oranges. Take pulp and seeds out and save. Slice the rind of oranges finely. In one pot put the slices, the orange juice and part of the 3 quarts of water. In the other pot put the pulp, seeds and the rest of the water. Let stand twenty-four hours. Bring pot containing pulp and seeds to a boil. Let boil a short time, then strain into pot with orange slices and juice. Boil on medium for two hours. Add sugar and boil two more hours or until you see that it is jelled. Add juice of the lemon before removing from the heat.

ORANGE BISCUITS:

Make regular biscuits. On top of each biscuit, put a small amount of marmalade and press down firmly. Bake.
