OATMEAL LACE COOKIES 
2 tbsp. shortening, melted
1 c. sugar
2 eggs
1/2 tsp. vanilla
1/2 tsp. almond extract
3/4 tsp. salt
2 tsp. baking powder
2 c. oatmeal (uncooked)

Combine shortening and sugar until light and fluffy. Add vanilla and almond extract. Mix salt and baking powder with oatmeal, and add to first mixture. Drop by teaspoons on greased cookie sheet, 2 inches apart. Bake 12 to 15 minutes at 350 degrees. Remove from cookie sheet immediately after baking. Makes about 36 cookies.
