LACE OATMEAL COOKIES 
1 c. Quick Quaker Oats (1 minute oats)
1 c. sugar
3 tbsp. flour
1/4 tsp. baking powder
1 tsp. salt
1 stick melted butter
1 tsp. vanilla
1 beaten egg

Mix first 5 ingredients together. Add next 3 ingredients. Refrigerate overnight. Drop small amounts about 3 inches apart on a cookie sheet lined with aluminum foil. Bake at 325 degrees for 10-12 minutes. Let cool and peel off of foil. Makes 8 dozen.

This recipe is quick and easy. The cookies are delicate and absolutely delicious. I was making them for a cookie exchange and needed 6 dozen cookies. When I saw that this recipe made 8 dozen, I thought that was perfect. However, it only made about 4 dozen. I even made my cookies fairly small. Definitely try this recipe but remember that you will need to double the ingredients if you need more than 4 dozen cookies.

The recipe was good, but my cookies stuck so badly to the aluminum foil that I had to throw a bunch away. I made one batch with parchment paper instead and was MUCH more successful!
