OVEN FRIED FISH 
2 lbs. fish fillets
1 tbsp. salt
1 c. milk
1 c. fine bread crumbs
4 tbsp. melted butter
Paprika

Cut fillets into serving size portions. Add salt to the milk and stir. Dip the fish in the milk and roll in crumbs. Place on greased baking sheet. Pour melted butter over fish. Place pan on rack near top of 450 degree oven. Bake 10 to 12 minutes or until fish flakes easily when tested with a fork. Sprinkle with paprika. Serve immediately to four.

TARTAR SAUCE:

1/2 c. mayonnaise
1/2 c. pickle relish
1 tbsp. grated onion
1/2 tsp. paprika
1 tbsp. tarragon vinegar

Combine all ingredients. Chill thoroughly.
