CARROT CASSEROLE | |
5 c. cooked carrots 1 sm. chopped onion Ritz crackers 1/2 c. butter 1/2 lb. Velveeta cheese Saute 1 small chopped onion in 1/2 cup butter. Layer carrots and 1/2 pound Velveeta cheese. Pour onion mixture over the top. Top with crushed Ritz crackers. Bake at 350 degrees for 1/2 hour. May be made a day ahead if refrigerated. Serves 6-8. |
