INDIAN SUMMER SANDWICH 
1 (6 1/2 oz.) can Star Kist tuna in water, drained
6 oz. soft cream cheese
1/4 c. crushed pineapple
1/4 c. shredded carrot
2 tbsp. chopped walnuts
1/8 tsp. ginger, optional
1/2 c. alfalfa sprouts
8 slices whole wheat nutbread

Combine cream cheese, pineapple, carrot, walnuts, and ginger. Spread 2 tablespoons of the cheese mixture on each of 4 bread slices. Top each with 2 tablespoons alfalfa sprouts and tuna. Top with remaining bread slices. Makes 4 servings.
