TOFU SURPRISE - CALIFORNIA STYLE
SANDWICH
 
Tofu (extra firm)
Sprouts (alfalfa or clover, radish)
Mayonnaise
Mustard (stone ground type with seeds visible)
Pepperidge Farm sprouted wheat bread
Sun dried tomatoes, marinated in olive oil
Crazy Janes Mixed Up Salt

Spread mayonnaise on one slice of bread and mustard on other slice. Slice tofu in 1/2" thick slices. Put on paper towel and pat dry. Place tofu on bread and then sprinkle with Crazy Jane's salt. Four tomato halves per sandwich. Remove excess oil on paper towel. Next cover tofu slice with sun dried tomatoes, cover with sprouts. Then put other slice of bread on top.
