BONELESS STUFFED CHICKEN BREAST | |
4 to 6 skinned boneless chicken breasts 1/2 c. seasoned bread crumbs 1/4 c. grated Parmesan 1/4 c. grated Romano 1/4 c. grated Monterey Jack 1/4 c. milk 2 tbsp. melted butter Salt and pepper 1 tbsp. each of 3 cheese (reserve) Using one breast at a time, place between two pieces of wax paper and flatten breast. Mix remaining ingredients in bowl to make stuffing. Place 1 1/2 tablespoons of stuffing mix in center of each breast, roll and truss with toothpick. Bake at 350 degrees for 20 minutes. Remove from oven, sprinkle with grated cheese mixture (garnish). Put back in oven. Bake until cheese becomes golden brown. Serves 4-6. |
