PITTSBURGH POTATOES 
4 c. cubed, peeled potatoes
1 sm. onion, chopped
1/2 can pimientos (optional)
4 tbsp. butter
4 tbsp. flour
2 c. milk
1/2 lb. cheese, grated
Salt and pepper to taste

Parboil potatoes and onion in salted water. Remove from heat, drain and place in buttered casserole. Melt butter, stir in flour and add milk. Bring to boiling point and add cheese. Stir until cheese is melted. Add pimiento and salt and pepper. Pour sauce over potatoes and bake at 350 degrees for 30-40 minutes.

My Grandmother always called these Potatoes "Fort Pitt Potatoes" She used a good sharp cheese from Cuba NY. She was from Potter County PA.
