GERMAN POTATO SALAD | |
2 1/2 lb. red potatoes 10 slices bacon 2 tbsp. flour 1 c. vinegar 1 c. water 4 tsp. salt 1 1/2 tsp. sugar 2 onions (med. size) 4 tsp. parsley Boil potatoes, peel, slice and square while warm. Slice onions thin and chop. Cut up bacon in small pieces and fry until crisp with chopped onion. Remove from frying pan and drain on paper towel. Using all of bacon grease (hot), add flour, salt and sugar. Stir until dissolved, then add water and vinegar. Cook until thickened. Pour over warm potatoes. Add parsley, bacon and onion mixture; stir well. Can be kept warm in crock pot, stirring occasionally. Recipe can be doubled or tripled for a crowd. |
