GERMAN POTATO SALAD | |
6 med. potatoes, boiled with skins on 4 slices bacon, cut into pieces 1/2 med. onion, chopped 1/4 c. sugar 1 round tbsp. cornstarch 1/4 c. cider vinegar 1 c. water 1 tsp. salt Pepper to taste Peel potatoes and cube. Set aside. Fry bacon with onions slowly, until done, but not crisp. Take out bacon and onion and set aside. In bacon grease, stir in sugar, vinegar, salt and pepper. In another glass, mix water with cornstarch. Slowly pour in cornstarch mixture to hot grease mixture. Keep stirring until thickened over medium heat. Add bacon and onion. While still warm, pour over potatoes and stir. Serve warm. Serves 6. |
